Fruit flies are frequently the cause of wines turning to vinegar. A lock also forces the yeast to make use of the oxygen contained in the sugar which causes a higher percentage of alcohol to form. To use merely place a small amount of water (or better yet, glycerine) in the lock so the escaping gases must bubble through it.
